This is a convenient shopping list for the long and
short versions of my recipe.
Meat
- 2 ham hocks
- ¼ lb bacon
- 1 big smoked beef sausage
- various lessor cuts of pork as desired
Dry goods
- 1 lb black beans (uncooked)
- 3 cups rice (long grain or your choice)
- 1½ cups manioc meal (or Cream of Wheat®)
Herbs, spices and aromates
- salt
- ground black pepper
- 3 bay leaves
- 1 tbsp powdered mustard
- 1 tsp chili sauce (Frank’s, Tabasco, etc.)
- 1 tablet caldo de res
Produce
- 4 cloves garlic
- 4 medium onions
- 1 large onion
- bunch collard greens or kale
- 3 Roma tomatoes
- ½ medium green bell pepper
- ½ bunch Italian parsley
- 3 scallions
- 6 oranges
Miscellaneous and “on-hand” stuff...
- raisins
- 1 egg
- ¾ stick unsalted butter
- 5 tbsp vegetable oil
- 1 cup olive oil
- ¼ cup white vinegar
- water
