Sofrito is a sort of accompaniment to cooking. You put it into things, for example, the stuffed chile recipe, chiles rellenos. Got this from Daisy Cooks. It will keep a few days in the refrigerator or can be frozen in small quantities for using on short notice.
Makes 4 cups. This is enough to make the chiles rellenos recipe.
2 medium | onions | |
4 | mild peppers; Daisy likes cubanelle | |
16 cloves | garlic | |
1 bunch | cilantro | |
7 | ajices dulces (or add more cilantro) | |
4 | tomatoes, cored | |
1 large | red bell pepper |
Chop ingredients in order coarsely and add to a food processor to purée until smooth.
