Sofrito is a sort of accompaniment to cooking. You put it into things, for example, the stuffed chile recipe, chiles rellenos. Got this from Daisy Cooks. It will keep a few days in the refrigerator or can be frozen in small quantities for using on short notice.


Makes 4 cups. This is enough to make the chiles rellenos recipe.


  2 medium onions
  4 mild peppers; Daisy likes cubanelle
  16 cloves garlic
  1 bunch cilantro
  7 ajices dulces (or add more cilantro)
  4 tomatoes, cored
  1 large red bell pepper


Chop ingredients in order coarsely and add to a food processor to purée until smooth.
