(Frenched) Rack of lamb

This is a practical illustration of the basic, four steps of oven-roasting from the Meats main page.

Preparation

1. Preheat skillet to 450°.

2. Season.

3. Oil skillet.

4. Sear roast each side for 2 minutes; do not play with it.

5. Turn and sear the back side for 2 minutes.

6. Transfer to roasting rack.

7. Roast for 25 minutes at 375°. Internally, the roast should read 135° (medium rare).

8. Let rest for 8 minutes for each pound of meat.

9. Serve, cutting into lollipops, etc. as desired.
