These are fabulous and tasty—unlike the ones you buy in the frozen food lockers at Costco or Sam’s Club. They are amazingly good to eat—tastier and more interesting than slices of normal-sized Quiche.
1 cup | butter, softened | |
16 oz | cream cheese | |
2 cups | all-purpose flour | |
6 oz | Italian sausage | |
1 cup | shredded Swiss-style cheese (4 oz) | |
1 tbsp | minced chives | |
2 | eggs | |
1 cup | cream (or half-and-half) | |
¼ tsp | salt | |
dash | Cayenne pepper |
1. In a large bowl, beat butter, cream cheese and flour until smooth. Shape tablespoonfuls of dough into balls; press onto the bottom and up the sides of the cups of a greased, miniature muffing tin.
2. In a large skillet, cook sausage over medium heat until no longer pink. Drain off fat. Sprinkle sausage, cheese, and chives into muffin tin.
3. In a small bowl, beat eggs, cream, salt and pepper until blended. Finish filling crusts in muffin tin.
Variations on the sausage include prosciutto and spinach.
4. Bake at 375° for 30 minutes or until browned. Serve warm.
