Paella shopping list

This is for the recipe which feeds probably 6. I have two paelleras and usually feed twice that. Scale accordingly.

Broth and Sofrito

• olive oil
• head of garlic
• tomato paste
• smoky paprika
• 32 oz chicken stock
• 1 bottle clam juice (optional)
• 2/3 cup dry sherry
• saffron (optional)
• 1-1/2lb chicken thighs, boneless or with bones
• kosher salt
• fresh-ground pepper
• 1 lb large shrimp, deveined
• 1lb clams or mussels, rinsed and debearded (optional)
• 1lb chorizo (optional)
• onion, fine-diced
• roasted red peppers or bells
• 3 cups arborio rice (medium-grained rice)
• 1 cup green beans, fresh
• other vegetables like chick peas and artichokes
