Mirepoix

This is a French term for the holy triumvirate of aromates used in soups and stocks, sauces and meat dishes. The mirepoix consists of two parts finely chopped onion and one part each of chopped carrot and celery.

Most often, these three are sweated together in a little oil or butter in a skillet or pot at the beginning of a dish.
