|2 tbsp||cooking oil|
|medium||onion, sliced into thin wedges|
|1-2 lbs||sausage, spiced (Italian)|
|2 small||yams, small-diced|
|2||squash (yellow or zucchini), coarse-diced|
|1 tsp||Kosher salt|
|fresh, coarse-ground black pepper|
1. Clarify onion in very large skillet, don't brown.
2. Add in sausage until beginning to brown.
3. Cook covered until ready. Take care not to burn.
