Dutch Oven Potatoes

There's a catering business (warehouse and kitchens) across town from me. They are open Wednesday through Friday as a restaurant with a line. There you can sample a subset of their dishes for about $10-$15 for a course of main plus two side dishes and bread. Dessert is a little more.

It's all real good. My favorite dinner is their wet/marbled brisket, these Dutch oven potatoes and skillet sautéed green beans.

It's called Molly's. They don't publish recipes as far as I know, but I'm developing this one based on my own forensics.

Ingredients

— bacon or tallow
— red potatos
— onion, medium diced
— chicken stock
— cheddar cheese

Preparation

  1. If using bacon, render at least a little fat; remove bacon pieces long before crispy.
  2. Clean potatoes, leaving skins on as much as possible. Cut up to 1" or 1½" pieces
  3. Dice onion to ½" pieces.
  4. Toss potatoes and onion in (Dutch oven) pot to coat in bacon fat. Add chicken stock, cover and simmer for 45 minutes or less if you want sharper edges on the potatoes.
  5. Fold bacon back in if you're using it. Add cheddar cheese. Cover and remove from heat.
  6. By the time everyone's rounded up and sat down, it shoud be ready.
