The basic recipe is from a work colleague. I have modified it slightly.
A bunch of cookies.
1½ cups | granulated sugar | |
1¼ cups | butter* | |
2 | eggs | |
1 tsp | vanilla | |
3½ cups | flour | |
1 tbsp | baking powder | |
¼ tsp | salt | |
1½ cups | coconut, packed | |
¾ cup | walnuts | |
1. Cream together sugar and fat. *Renae uses margarine, but it is also possible to experiment with a mixture of shortening and butter.
2. Add eggs and vanilla.
3. Mix together flour, baking powder and salt, then incorporate into dough.
4. Add in coconut and chopped walnuts. Roll into 2"-diameter log, chill or freeze.
5. Slice into ¼" cookies and arrange on sheet (small spacing). Bake at 400° for about 6 minutes.
