Beef and Leek in Ginger Syrup

I saw Ming Tsai do this.

Ingredients

  Ginger Syrup
  thinly sliced, fresh ginger, peeled
  water
  sugar
 
  Marinade
  soy sauce
  sesame oil
  minced garlic
 
  Flank steak about 1" thick
  olive oil
  julienned leek

Preparation

Marinate the flank steak uncut overnight.

Prepare ginger syrup by reducing ingredients to 40%.

Cut flank steak into very thin slices.

Sauté small amounts of flank steak (one or two persons’ worth) at a time in wok. Leave them between rare and medium. Remove.

Lightly sauté julienned leek.

Add in ginger syrup.

Add beef back in for less than a minute.

Plate.
